Broccoli, Ham & Cheese

Makes 4 Servings:

What You'll Need:

- 1 Box Macaroni & Cheese
- 1 6oz Chobani Fat Free Plain Greek Yogurt
- 1 10oz bag Frozen Broccoli 
- 3 Lrg Slices Black Forest Ham, cubed
- 3 tablespoon Milk or Milk Alternative

Method: In a Large pan boil noodles and broccoli together following the time on the Macaroni. Drain in colander and return to pan. Stir in cheese powder, yogurt and milk until creamy. Add in Ham. Enjoy!~

Ham & Egg

This was an awesome Pinterest find!~ And @ 100 calories or less each these are a great way to start off your day!~ These are super filling too!~

**Changes I made: 
1) To lower the Fat by 5g each I used 1 Egg White per cup instead of the whole egg, it also lowered the calories per cup by 64 calories.
2) I seasoned each cup with Parsley, Smoked Paprika, Sea Salt & Fresh Cracked Pepper
3) I used Tillamook Pepper-Jack instead of Parmesan
4) I used Black Forest Ham from Costco, and because the slices were larger I was able to cut them in half and use 1 half slice per cup. Cutting the fat and calories in half.

**My Version: 70 Calories 2.6g Fat per cup
(Fat content will vary based on the type in cheese you use and the amount, I split 1, 1oz slice between 8 cups)



Spicy Buffalo Chicken Pizza

Bubbly Mozzarella, Sweet Grilled Onions, and Spicy Buffalo Chicken Breast. This pizza was a real treat for the taste buds.

What You'll Need:

- Pizza Dough (You can use store bought but I strongly suggest you try this recipe from Jim Lahney , it is crunchy on the outside and soft on the side)
- 1 Jar Organic Pasta/Pizza Sauce
- 1 Package Pearl Mozzerlla
- 1 Bag Foster Farms Buffalo Chicken Strips, Thawed
- 1 Yellow or Red Onion
- Parsley to taste

Method: Chop and grilled onion in a skillet. Cube thawed chicken. Preheat oven accordingly with homemade pizza dough directions or store bought pizza dough directions. Prepare pizza dough to make 1 8-10in personal pizza. Layer with pizza sauce, onions, buffalo chicken cube, pearl mozzarella and parsley. (Lightly topping is suggested, as the more you put the more the dough will be weighed down) Repeat with remaining pizza dough & toppings, follow cooking directions accordingly with the pizza dough you have chosen. Enjoy!~

A1 Thick & Hearty meets The Western Vegan Style

Are you a fan of Whataburger's A1 Thick & Hearty? How about Carls Jr's The Western? Here the two have married and become vegan!~ If you are new to trying out vegan foods this is an awesome start. If you're not sure about having an all soy burger, you can try a semi vegan version of this.

What You'll Need:

- 1 Frozen Boca Burger 
- 1 Hamburger Bun
- 2 Slices Vegan Bacon or Pork Bacon
- 1 Slice Soy or Cheddar Cheese
- 1 bag Alexia Onion Rings
- 1 bag Alexia Waffle Fries
- 1 Tablespoon Worcestershire or Bragg's Amino Acids
- 1 Tablespoon A1 Thick & Hearty

Method: Follow directions on the onion ring and waffle fry bags. On a plate lay Boca Burger and cover with Worcestershire or Aminos.  Follow the directions on your bacon package. Heat a skillet to low/med heat and cook soy patty. Toast buns, layer with patty, cheese, bacon, 3 onion rings and A1 Sauce. Enjoy with a side of "Frings" Fries & Onion Rings.

Chocolate Chip Banana Muffins

These Muffins are not only Vegan Friendly but Kid Friendly as well. Soft, Moist Banana goodness!~

What You'll Need:

- 1 Banana 
- 1/3c vegan butter ( I use Earthbalance Coconut butter)
- 1/2c sugar
- 2c flour (Have only used All Purpose, but if you choose to experiment with other flours please let us know how they turn out!)
- 1/2 Tablespoon Baking Powder
- 1/2 teaspoon Baking Soda
- 1/2c Soy Milk ( Almond has worked for me before)
- 1 tsp Vanilla Extract
- 1/4c Chocolate Chips
*You can add in 1/4c walnuts  pieces for some healthy fat. **Nuts in solid form should never be given to children under six years old!~

Method: Preheat Oven to 350F. Mix dry ingredients together in a bowl. In another large mixing bowl blend together butter and sugar. Using a large fork or hand pastry mixture, mash and work in banana. Mix in vanilla and milk. Add in dry mixture and stir until well combined. Stir in chocolate chips and nuts. In a buttered muffin pan evenly distribute batter. Bake for 8-10 mins or until a toothpick or knife can pierce the muffin and come out clean. Enjoy!~
